The combination of chicken, bacon, chicory and garlic in this Chic Chic salad is hard to beat! This is my new go-to for lunch and dinner because it’s filling, tasty and satisfying.
What you will need:
- 1 medium white onion
- 4-6 chicken thighs (not breast)
- Chicory leaves
- Spring onions
- Sweet red pepper
- Bacon
- Avocado
- Caesar dressing
- Salt and pepper
- Honey
- Mustard
- Iceberg lettuce
For the Caesar Dressing:
- 2tbs dijon mustard
- 2 garlic cloves
- 1/4 cup of fresh lemon juice
- 1/2 tsp salt
- 1/2 black pepper
- 1 cup of olive oil
- 1/2 parmesan cheese
What to do:
- Fry the onion in ghee/ butter until soft
- Chop the chicken into cubes and add to the onion
- Once golden lower the heat and add a dessert spoon of raw honey, keep stirring so it doesn’t stick to the pan but you want to get the chicken brown and golden.
- Chop the iceberg lettuce and line the bowl, add finely chopped sweet red pepper
- Slice and dice a full avocado
- Drizzle a layer of homemade Caesar dressing on top of the lettuce
- Let the chicken cool slightly
- Crisp the bacon in an air fryer or pan and sprinkle it on top of the chicken.
- Then add spring onions and lastly grated parmesan
- Season as you like
For the Caesar Dressing:
- Place 2 Tbsp mayo, 2 tsp dijon, 2 pressed garlic cloves, 1/4 cup lemon juice 1/2 tsp salt and 1/2 tsp freshly ground black pepper in the bowl of an electric food processor. (Press garlic and squeeze juice right into the food processor).
