This is a great recipe to not only have a treat but also a muffin jam packed full of goodness and all the nutrients for supporting the endocrine system. Easy and quick to make. You’ll love them!

What you will need:
- 2 x courgette
- 260g (2cups) Brown flour
- 260g (2cups) Chickpea flour
- 1 tsp of baking powder
- 1 tsp of salt
- Turmeric
- Goats cheese or Feta
- 3 x eggs
- 1 x carrot
- 250ml milk
What to do:
- Turn oven on to warm to 200
- Grate the courgettes and carrot into a bowl
- Mix flour and baking powder in a separate bowl
- Combine goats cheese into the bowl with flour
- Crack 3 x eggs into bowl with grated veg and stir
- Gradually pour milk into veg and mix
- Gradually pour flour into veg mix and mix well to form a paste
- Pour mixture into individual lined or greased muffin tray
- Bake for 20 minutes or until golden!
- Enjoy!
