This is a great recipe to not only have a treat but also a muffin jam packed full of goodness and all the nutrients for supporting the endocrine system. Easy and quick to make. You’ll love them!

What you will need:
2 x courgette
260g (2cups) Brown flour
260g (2cups) Chickpea flour
1 tsp of baking powder
1 tsp of salt
Turmeric
Goats cheese or Feta
3 x eggs
1 x carrot
250ml milk
What to do:
Turn oven on to warm to 200
Grate the courgettes and carrot into a bowl
Mix flour and baking powder in a separate bowl
Combine goats cheese into the bowl with flour
Crack 3 x eggs into bowl with grated veg and stir
Gradually pour milk into veg and mix
Gradually pour flour into veg mix and mix well to form a paste
Pour mixture into individual lined or greased muffin tray
